Roast Style: Progressive

These tend to be lighter bodied coffees, that forefront flavour nuances inherent to the specific bean. These coffees tend to have natural sweetness and distinctive aromatic properties.

As a general guide, they'll be great brewed using any filter method. We'd recommend trying them black.

Roaster's Notes

Ethiopian heirloom varieties are generally quite resilient and can easily absorb higher heat due to the varietal’s high density and the region’s typically higher growing altitudes. However, with this lot’s addition of anaerobic fermentation and extended fruit contact, the density of the green beans is lowered. This means their more delicate structure benefits from a gentler hand when roasting, using moderated heat and a relatively short overall profile to preserve clarity, vibrancy, and the intensity of the aromatics. This approach preserves the terroir’s signature notes, showcasing bright stone fruit and layered floral nuances.

Collections:

Your order will be ready to collect on the first Tuesday or Friday that follows your order, at 13:00. We will send you an email confirmation when your order is ready for collection.

Courier:

We try to dispatch non Cape Town orders as soon as we can, and no later than the Tuesday or Friday that follows your order. Couriers take 1-3 days to deliver your package depending on your location.

We deliver around the Cape Town area every Tuesday and Friday.

COFFEE ORIGIN INFO

This special reserve lot comes from Negele Gorbitu Cooperative in Yirgacheffe’s Gedeo Zone, grown between the lofty altitudes of 1995m - 2020m ASL in fertile red-brown soils. Produced by Tracon Coffee, the cherries undergo careful anaerobic fermentation, sealed in an oxygen-free environment to enhance expression rather than overpower it. This controlled process amplifies the inherent terroir of the region, allowing varietal character and origin clarity to lead rather than fermentation-driven flavours. In the cup, the coffee is layered and expressive, showing bright citrus acidity, a textured mouthfeel, and notes of sweet stone fruit, pungent florals, and berry compote.
