Roast Style: Classic

These will be fuller bodied coffees that exhibit more obvious roast-centric flavours, like caramelised sugar.

While bitterness has its place in every coffee, there is enough of that in each raw coffee without us ever feeling it is necessary to add more of that through the roast process. For this reason, even our darkest roasts are still very moderate medium roasts, relative to the full spectrum of coffee roasts available in the market today.

Our classic coffees will make great espresso-based beverages, and they're a good option for french press and moka-pot brewing, especially if you like your coffee with milk.

Roaster's Notes

Our approach focuses on preserving clarity and vibrancy while developing sweetness, qualities for which Colombian washed coffees are highly sought after. Both Colombia and Castillo varieties can produce expressive, balanced cups, so we maintain a steady rate of development through the roast before allowing enough time after first crack to preserve the lot’s structure and flavour definition. This approach allows the coffee’s sweetness to fully develop without sacrificing its fruit brightness, resulting in a cup that is clean, lively and well balanced.

When will I get my order?

Collections:

Your order will be ready to collect on the first Tuesday or Friday that follows your order, at 13:00. We will send you an email confirmation when your order is ready for collection.

Courier:

We try to dispatch non Cape Town orders as soon as we can, and no later than the Tuesday or Friday that follows your order. Couriers take 1-3 days to deliver your package depending on your location.

We deliver around the Cape Town area every Tuesday and Friday.

COFFEE ORIGIN INFO

Santa Isabel is one of three family-owned farms operated by the Jaramillo family, alongside El Coco and Buena Vista, in Ciudad Bolivar, Antioquia, a mountainous region with a long history of coffee production. This lot was produced by Gabriel Jaramillo, a third-generation coffee grower who continues his family’s work across these farms alongside his wife, Luz Marina Moncada, and their family. While the Jaramillos come from a traditional coffee-farming background, they have increasingly embraced specialty coffee and more quality-driven approaches to production. This transition has been influenced in part by Gabriel’s friendship with Juan Saldarriaga, a pioneer of experimental and quality-focused coffee production in the region.
