Roast Style: Progressive

These tend to be lighter bodied coffees, that forefront flavour nuances inherent to the specific bean. These coffees tend to have natural sweetness and distinctive aromatic properties.

As a general guide, they'll be great brewed using any filter method. We'd recommend trying them black.

Roaster's Notes

As a washed, high-altitude coffee produced at almost 2000m ASL, Las Brisas has the density to take on a decent amount of heat, much like the Ethiopian heirloom varieties to which Pink Bourbon is related. The cooler growing conditions at this elevation encourage slower maturation, allowing the coffee to develop a dense structure and high potential for sweetness. We build momentum steadily throughout the roast, with particular attention to the later stages to ensure development doesn’t overwhelm the coffee’s more delicate qualities. The aim is to keep the cup bright, clean and articulate, with expressive fruit notes and a distinct candy-like sweetness remaining at the forefront.

Collections:

Your order will be ready to collect on the first Tuesday or Friday that follows your order, at 13:00. We will send you an email confirmation when your order is ready for collection.

Courier:

We try to dispatch non Cape Town orders as soon as we can, and no later than the Tuesday or Friday that follows your order. Couriers take 1-3 days to deliver your package depending on your location.

We deliver around the Cape Town area every Tuesday and Friday.

Produced by Eduardo Ruiz, this distinctive lot comes to us through Cuatro Vientos, a family-owned company founded in 2018 by the Gonzalez family. Working with producers across different regions of Huila, Cuatro Vientos focuses on sourcing expressive microlots that showcase the diversity and character of Colombian coffee.

Known locally in Colombia as Rosado, or Pink Bourbon in the specialty coffee world, this distinctive variety is celebrated for its vibrant aromatics, juicy fruit character and pronounced sweetness.
