Roast Style: Progressive

These tend to be lighter bodied coffees, that forefront flavour nuances inherent to the specific bean. These coffees tend to have natural sweetness and distinctive aromatic properties.

As a general guide, they'll be great brewed using any filter method. We'd recommend trying them black.

Roaster's Notes

Papayo is a rare and fascinating variety from Huila, Colombia, named for its oblong cherries that resemble tiny papayas. Once thought to be a Caturra mutation, genetic studies link it closely to Ethiopian landraces, giving this lot a layered and expressive flavour profile. Careful roasting highlights its elegance and clarity, with juicy yellow fruit, nectarine, and preserved apricot notes. A carefully controlled development enhances this coffee’s sweetness while preserving its vibrancy, delivering a beautifully rich cup that lets the refined character of the origin shine at center stage.

Sourced through Kawa, the Gomez family’s own export company, each lot is traced, cupped, and subjected to rigorous quality control at every stage. Working with farmers across Colombia, Kawa champions fair, transparent relationships and exceptional processing.
