Roast Style: Progressive

These tend to be lighter bodied coffees, that forefront flavour nuances inherent to the specific bean. These coffees tend to have natural sweetness and distinctive aromatic properties.

As a general guide, they'll be great brewed using any filter method. We'd recommend trying them black.

Roaster's Notes

Despite being a relatively experimental cultivar within Peru, La Chirimoya presents a clean, refined expression of Geisha, defined by stone fruit sweetness, delicate chamomile-like florals, and a light, tea-like structure.

From the outset of this roast, we build heat more gradually through the early stages to allow for a steady and even release of moisture. The focus is on maintaining balance, ensuring the coffee’s delicate structure remains intact while allowing its softer, honeyed fruit sweetness to fully express itself and unfold in the cup.

When will I get my order?

Collections:

Your order will be ready to collect on the first Tuesday or Friday that follows your order, at 13:00. We will send you an email confirmation when your order is ready for collection.

Courier:

We try to dispatch non Cape Town orders as soon as we can, and no later than the Tuesday or Friday that follows your order. Couriers take 1-3 days to deliver your package depending on your location.

We deliver around the Cape Town area every Tuesday and Friday.

COFFEE ORIGIN INFO

La Chirimoya is a small organic farm in El Huabo, San Ignacio, owned and operated by Victoria Ramos and her husband, Ulises Neyra. It sits high in the Cajamarca region between 1700–1800m ASL.

Over the years, Victoria and Ulises have become well respected within their community for their commitment to quality and specialty coffee production. Their farm spans just 1.5 hectares, where Geisha is cultivated in small volumes with close attention throughout harvest and processing. After harvesting, cherries are traditionally washed, fermented in tiled concrete tanks, and slowly dried on raised beds inside solar dryers to preserve clarity and sweetness in the cup.

La Chirimoya is sourced through Origin Coffee Lab, whose work in Peru centres around long-term producer relationships, transparent sourcing, and supporting smallholder microlot production.
