Decaffeination Process

This sophisticated decaffeination method ensures that the unique flavour notes - influenced by terroir and processing - are kept intact as far as possible.

The process: moistened green, unroasted coffee is saturated with pressurised, liquid carbon dioxide which draws out the caffeine. Thereafter, an evaporator is used to separate caffeine from the CO2, which can then be recycled for following decaffeination cycles. Once the desired caffeine level is attained (0.08% or less), the circulation of CO2 stops, leading to the drying of the coffee and, at last, it is ready for roasting.

Roaster's Notes

Shakisso Farm, found in Oromia, Guji, has a rich legacy. The farm is known for producing coffees with classic and iconic Ethiopian profiles - hints florals, stone fruits and pronounced citrus.

In the pursuit of preserving these unique origin characteristics, the partnership with CR3-Kaffeeveredelung and their patented 'Natural Liquid Carbon Dioxide Coffee Decaffeination Process' is instrumental. This sophisticated decaffeination method ensures that the unique flavour notes influenced by terroir and processing are kept intact, as the beans' structural integrity remains unaltered, all while relying on entirely safe and natural components.

Collections:

Your order will be ready to collect on the first Tuesday or Friday that follows your order, at 13:00. We will send you an email confirmation when your order is ready for collection.

Courier:

We try to dispatch non Cape Town orders as soon as we can, and no later than the Tuesday or Friday that follows your order. Couriers take 1-3 days to deliver your package depending on your location.

We deliver around the Cape Town area every Tuesday and Friday.

COFFEE ORIGIN INFO

Our fresh harvest decaffeinated lot from Shakisso is here! The previous lot was a fan-favourite, and this one’s even better.

Haile Gebre was forced to flee from his home in Yirgacheffe at 10 years old due to land claims for coffee production expansion. In spite of his discouraging introduction to the coffee sector, today he is affectionately known as ‘the Godfather of Guji coffee’. His diverse career path, including naval service and roles in government, coupled with his proactive stance on social matters, resulted in a prison sentence and subsequent education in Moscow. Haile and his family made Ethiopia their home again in 2001 after inheriting a piece of land. He then established the Cooperative Bank of Oromia, with a focus on coffee production. Through a collaborative effort alongside Tesfaye Bekele and Menno Simons, Haile’s passionate reconnection with coffee catalysed a remarkable transformation. Together, they redefined the landscape of Guji, shifting it from a once cattle-driven region to the thriving coffee hub we are familiar with today.
