Roast Style: Progressive

These tend to be lighter bodied coffees, that forefront flavour nuances inherent to the specific bean. These coffees tend to have natural sweetness and distinctive aromatic properties.

As a general guide, they'll be great brewed using any filter method. We'd recommend trying them black.

Roaster's Notes

We begin with a moderately high charge temperature and focus on building steady, even heat through the early stages to preserve fruit clarity and structure. A gentle development after first crack allows the coffee’s layered sweetness to come to the fore without sacrificing nuance.

In the cup, delicate floral aromas unfold alongside ripe mango and creamy strawberry yoghurt notes, creating a layered, vibrant sweetness. The syrupy texture and gentle, balanced acidity give the coffee a satisfying weight while highlighting its lively, expressive character.

COFFEE ORIGIN INFO

Sourced from smallholder farmers in the Banko Gotiti Kebele of Gedeb, Yirgacheffe Zone, this natural heirloom lot was processed at the Wete Ambela Coffee Export PLC washing station. The farms here sit between 1950 - 2100m ASL, each typically spanning just one to two hectares, where farmers handpick ripe cherries at peak maturity.
After harvesting, cherries are carefully dried on raised African beds for 18 to 21 days, turned frequently to ensure even drying and preserve the integrity of the fruit. This slow, attentive process enhances the clarity and sweetness of the cup. This lot embodies the expressive elegance of southern Ethiopia, showcasing the harmony between meticulous farming and the region’s high-altitude terroir.
