While Bourbon can be found growing throughout a range of origins, this will be our first single variety Bourbon lot coming out of Peru. As the beans are more uniform in size, single variety lots ensure more even heat transfer and give rise to more consistent roasts overall. We can confidently push development without concern that smaller screen size beans within the batch may overdevelop.
Despite its low yields and susceptibility to disease, Bourbon is an important genetic variety as a result of its exceptionally sweet and clean cup quality. With notes of malt and spice, this microlot has sweetness in abundance both with and without milk.
Third-generation coffee grower Percy Pintado runs his farm with the support of his three children. Comparatively large for the area, his farm extends over 5 hectares where he maintains over 15000 trees. He has the added benefit of having a small 'beneficio' on the estate where he processes the coffee.
This lot forms part of a sourcing program through an organisation called Origin Coffee Lab where investments have been made into premium producers, such as Percy, to create unique, differentiated microlots.
Percy prides himself on the quality of coffee being produced and aspires to keep pushing the boundary with the use of better technology. He also plans to introduce different varieties and upgrade his fermentation tanks.
