The cooler growing conditions at this elevation encourage slower maturation, allowing the coffee to develop a dense structure and high potential for sweetness. We build momentum steadily throughout the roast, with particular attention to the later stages to ensure development doesn’t overwhelm the coffee’s more delicate qualities.
