Roasters' Notes:

We apply a relatively long development time to optimise the level of caramelisation in the coffee. Aggressive - but measured - heat application helps produce the requisite sweetness and body for espresso-based drinks, whilst avoiding scorching. We push the roast just far enough - and not to the point where we'd diminish its potential to produce lovely, juicy filter coffee.

Based in the small community of the Chinchaysuyo, Don Juan Asto prides himself in producing outstanding coffee lots from year to year and is known for his zealous, impassioned demeanour. 

Much like Ramos Ccoillar of the La Nueva Florida farming community we also work with, the 'roja' plague that occurred between 2011 to 2014 had its effect on Juan as well. Many producers were hit hard resulting in many abandoned farms but as a long-term member of ACPC cooperative, Juan and some of his neighbours maintain a positive attitude and continue to strive to improve the quality of his coffee with each crop.
