The Landscape of Brazil is producing a mélange of specialty coffees to choose from. This lot from Fazenda Passeio has the hallmark features of the region: mild acidity and a full, smooth body, accompanied by satisfying gentle fruit notes.
Even high grown Brazilians, such as this lot, are likely to be softer beans and can run the risk of scorching. Lower density coffees contain more air pockets within the bean, slowing the transfer of heat. We opt for a lower charge temperature and a moderate development time for a sweet and rounded cup which lends itself effortlessly to a variety of uses.
A trailblazer for Brazilian coffee within the Minas Gerais region, Adolfo Vieira Ferreira is a fourth-generation coffee farmer. The farm’s 130 hectares spans across precipitous mountain slopes. Uncommon for Brazil, all of the cherries are handpicked only when fully ripe. Though time consuming and costly, Adolfo ensures quality by employing a number of skilled workers when harvest begins.
The farm is equipped with all of their own processing facilities from the sorting station to a large pulper as well as many patios to sun-dry the coffee meaning Adolfo and his team can manage quality at all the various stages of processing.
