Brazil is the world's biggest producer of arabica coffee - but superb, distinctive specialty coffees have traditionally been hard to find. Excitingly however, this is starting to change.
To produce the quality that we are looking for, farmers need to take extra measures in each step of the process. Emilio has been open to the challenge and has made improvements on his farm over the last four years - building raised drying beds last year, as an example.
This lot of coffee was also subject to select picking - only ripe cherries - which is obviously a more expensive process that is uncommon in Brazil.
