These relatively high-grown Peruvians are surprisingly resistant to heat. We got best results with a rather long ramp, and aggressive heat before, during and after first crack. The end result, however, is anything but aggressive.
While it may not be Kopi Luwak, the coffee trees farmed by members of the Cenfro Cooperative are fertilized by bird guano (an exotic word for "pooh") and cultivated according to the strictest organic practices. Farmers also engage in fairly progressive pruning to prevent over-production of coffee cherries and achieve a higher quality coffee cherry.
