Considering the more brittle cell structure of Brazilian naturals, we commence with a gentle ramp up to first crack. We bring drum speed down for lower density coffees, keeping the beans steadily cascading within the drum. We cut back development time and allowed more of the delicate and elegant fruit acidity present in this lot to peak.
Sul de Minas is a reputable coffee growing area in Brazil. Attributed to the higher altitudes and cool climate, coffee lots from this region are known to exhibit more fruit aromatics as well as acidity when compared to some other areas within the country. Nonetheless, we know that there is so much more than terroir that comes into play when producing a standout micro-lot.
Augusto and his wife, Patricia, come from a long line of coffee-producing families and both recognise their role in transcending the current standard. To facilitate more sustainable coffee production in Brazil, Augusto firmly believes in furthering specialty. He focuses on production at a smaller scale with cherry maturation as a fundamental aspect.
This lot has been dried for 10 days on the patio in addition to 10 days in the drying box, where warm air is pushed up through the cherry in order to maintain a consistent drying temperature.
