Although there has been a movement towards growing a range of exotic cultivars and experimental processing methods in Colombia, their washed lots have not been neglected.
The focus on high-quality washed coffee by the FNC (National Federation of Coffee Growers) and the introduction of high-quality internet across Colombia have greatly improved the ability to access information around developing processing practices. This collective lot highlights the significant role improved processing adds to the cup - with hints of delicate rooibos, cherry and a rich, juicy finish.
A multitude of young Colombian coffee growers has incorporated the knowledge of production from previous generations while introducing and improving their lots with new organic practices on their own farms. At present, numerous producers are already organic - with many in transition. Besides the organic premium, additionally, growers are getting a premium that is determined by the cupping scores.
The farmers work with a local exporter, Pedro (the QC director) and a team of agronomists at the bodega (Purchasing Point) who are involved in quality control. They will analyze, cup, and keep the lots separate until approval.
