This altitude is one of the contributing factors to the supreme levels of laser-like acidity associated with Narino coffees. The presence of this abundant natural acidity means that we can roast a little more generously, giving more time to develop sweetness levels, while still being left with very lively acidity in the cup."
Maria inherited her farm from her parents 30 years ago. She believes this 1 hectare Castillo lot represents the pinnacle of what her farm produces. Drying is particularly trying in this region - a key is to get moisture level down to desired levels quickly enough - so rain protection, whilst maintaining high ventilation levels, are key.
