Roasters' Notes:

Narino is the highest growing coffee region in Colombia. We get nosebleeds just thinking about it. This altitude is one of the contributing factors to the supreme levels of laser-like acidity associated with Narino coffees. 
The presence of this abundant natural acidity means that we can roast a little more generously, giving more time to develop sweetness levels, while still being left with very lively acidity in the cup."

Coffee Origin Information:

Maria inherited her farm from her parents 30 years ago. She believes this 1 hectare Castillo lot represents the pinnacle of what her farm produces. Drying is particularly trying in this region - a key is to get moisture level down to desired levels quickly enough - so rain protection, whilst maintaining high ventilation levels, are key.
