These high-grown Peruvians are surprisingly resistant to heat. We got best results with a rather long ramp, and aggressive heat before, during and after first crack. The end result, however, is anything but aggressive.
Peru is a region bursting with coffee potential. This community lot is contributed to by 25 farming families in the Agua de Nieve community, who realised their elevation and quality soils showed great potential for specialty coffee. After a decade of work, they now focus specifically on production of quality coffees, and are achieving the potential they envisaged first 15 years ago.
